Sweet Cheese Roll Recipe- تحضير حلاوة الجبن
Sweet cheese roll is an arabic dessert, made of semolina, cheese , water and sugar.
This recipe is very tasty and the dough is soft and sweet. They usually use Ikawi cheese(different kind of cheese), but here in my recipe i’ll be using mozzarella cheese because it’s easy and fast to melt.
Sweet Cheese Roll Recipe- تحضير حلاوة الجبن:
Ingredients:
- 1 3/4 cups water
- 3/4 cup sugar
- 1 cup semolina
- 1 1/2 cups shredded mozzarella cheese
1 tbsp rose water
1 tbsp blossom water
Syrup(water, sugar, lemon juice, rose water, blossom water)
Ground pistachios

To make the syrup:
- 1 cup sugar
- 3/4 water
- t 1sp lemon juice
- 1 tsp rose water
- 1 tsp blossom water
In a saucepan combine sugar, water and lemon juice and bring to a boil over medium heat. Reduce heat to low and let it simmer for 5 minutes . Remove them from the heat and add the rose and blossom water. Let it cool completely.
To make the Sweet Cheese Roll - Halawet el Jibn :
- In a saucepan heat together the sugar and water till sugar dissolves. Bring it to a boil.
- Add in semolina and keep stirring. Turn off the heat, add rose and blossom water. Add in cheese, it will start to melt, keep mixing using wooden spoon until well combine and a soft dough starting to form.
Transfer the dough to the counter covered with stretchy plastic wrapper. Drizzle some syrup to smoothen it out.
Cut the uneven edges of the dough into a straight line.
Cut it into bite-size pieces.
Finally, sprinkle ground pistachios, garnish pieces with beautiful Rose petal jam to pop of the color even more. Pour some syrup and serve!
