Baking in general means almost everything to me. People think I bake because I'm super healthy, I mean yeah I eat healthy and I cook healthy, but who said I don't buy breads, cakes or cookies?...
Sometimes I have guests are coming over and I'm not prepared, I take it easy on myself and grab some cookies and cake from the local store, but deep inside I wish I just did some homemade cookies. I know there is a lot of easy-no time recipes to bake . Last minute baking doesn't work with me, if you do you are lucky..

Baking especially making dough-bread helps keep me happy, balanced and grateful. Mixing the right quantities of the right ingredients for the right amount of time at the right temperature and you will end up with something beautiful and delicious. And as you get better and know how certain ingredients work with other ingredient, you can mix things up and be creative.
These are date fingers,paste date rolled with a homemade dough. Same way if you're making pizza or bread dough, a bit more oil in this recipe for the crunchiness.
Dates are sweet, and I loveeeeeeee sweet. As we all know dates have an excellent nutrition, contain several vitamins and minerals, in addition to fiber and antioxidants. However, they are very high in calories since they are a dried fruit. But here why I came up with recipe. Eating one or two from these date fingers give you all the sweet cravings, energy. I usually like to have it before my workout and I call it my POWER MEAL .

Date Fingers
Dough
- 2 1/2 to 3 cups flour
- 3/4 cup water
- 1/2 cup oil
- 1 tbsp. yeast
- 1 tsp baking powder
- 1 tbsp. sugar
- pinch of salt
Filling
- 500 grams date paste
- 1 tbsp. butter or vegetable oil
- 1 tsp cinnamon
Topping
- 1 large egg (Beaten)
- 1 tbsp. milk
- 1/4 cup sesame

Instructions
- For the dough: In a stand mixer, mix together 2 1/2 cups of flour, yeast, sugar, baking powder, salt, oil, and water. Beat on slow speed until dough forms , if it's too sticky add the rest of the flour gradually I usually start with 1 tbsp. Put the dough in a slightly oiled bowl and cover it until the dough doubled in size.
- For the Filling: Mix the dates paste, butter or oil and cinnamon.
- For the fingers: On a slightly floured surface. Roll the dough into rectangles, and roll the dates into rod, and place the date rod near the edges of the dough. Roll the dough until the date is covered. Cut into 2 inches fingers using knife or pizza cutter.
- For the topping: Mix the egg, milk and sugar vanilla.
- Preheat oven to 350 degree F. Place the date fingers on a cookie sheet and bake them for 15-20 mins until golden.
