Curry Rice Stuffed With Steak Fajitas
Curry Rice Stuffed with Steak Fajitas is a one dish meal that will feed crowd.
You mostly see Fajitas served as a taco flour or corn tortillas. But in this recipe we will make an easy basic rice with it. It's easier, yummier and ready to eat.
This recipe is enough for 6 people, we enjoyed it with plain yogurt and turned it to Mexican bowl for lunch.
I'll definitely be trying this recipe with chicken or shrimp. Yum

Curry Rice Stuffed With Steak Fajitas
An easy one dish meal for the whole family.

Ingredients
For the steak Fajitas Marinade:
- 0.50 lbs. flap meat(cut into strips)
- 2 tbsp. lemon juice
- 1 tbsp. vinegar
- 1 tbsp. olive oil or vegetable oil
- 1/4 tsp ginger
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp curry
- 1/2 tsp all spices or 7 spices
- 1/4 tsp cumin
- 1/2 tsp paprika
- 1 tbsp. tapatio hot sauce or tobacco(if not available 1 tsp of red pepper flakes)
- salt and pepper
For the vegetables:
- 1 green pepper(cut into wide strips)
- 1 yellow pepper(cut into wide strips)
- 1 red or orange pepper(cut into wide strips)
- 1 cup sliced mushrooms
- 1/2 red onions(cut into slices)
- 1 tbsp. minced garlic
- 1/4 tsp ginger
- 1/4 tsp all spices or 7 spices
- salt and pepper
- 2 tbsp. soy sauce
For the Rice:
- 1 cup of soaked Basmati Rice
- 1 tbsp. vegetable oil
- 1/2 diced white onions
- 1 tbsp. minced garlic
- 1/4 tsp turmeric
- 1/2 tsp curry powder
- 1 tsp vinegar
- 1 tbsp. soy sauce
- 2 cups of water
- 1 tbsp. butter
Direction:
- For the marinade: Combine all the ingredients. mix them. Add the steak meat to the marinade, wrap the bowl and let it sit in the refrigerator for at least 2-4 hours. Ideally overnight.
- For the vegetables:Start by cooking the veggies. Over high heat, heat 1 tbsp. of oil, add the pepper, cover the pan and cook them for 2-3 minutes(I like the pepper so soft , if you like them crunchy cook them for 2 mins uncovered pan). Add mushrooms, red onions, and garlic, Ginger, all spices salt pepper and soy sauce. Cook more for about 2-3 minutes. Remove the veggies to a plate and set them aside.
- In the same pan, heat 2 tbsp. of oil, add the strips steak to the pan and cook them on high heat for 5 mins. After, turn the heat into low and cover the pan and let them simmer for 20 mins until tenderness.
- Add the cooked veggies to the steak and stir them well. (Steak Fajitas is ready here)
- For the rice: In a medium pan , heat the oil on medium heat. Add the onions and cook them until softened, add the garlic, curry powder, vinegar, soy sauce and salt and stir well to coat the onions. Add the water to the pan and stir, add the rice, bring it to a boil until the water significantly reduces. Turn the heat to low and cover the pan. Cook for 15-20 mins on low. Once fully cooked add 1 tbsp. of butter and turn the heat off. Leave the rice in the pot for 15 mins, then uncover and fluff with a fork.
Assembly: In a cake pan add the steak fajitas first, then add the rice, wait 15 mins before you flip it over.
In a large platter flip over the cake pan . It should fall out easily.
