Peach Cake With Cinnamon Glaze
Serves 12
Ingredients
- 1 1/3 cup sugar
- 3/4 cup oil
- 1/2 + 2 tbsp. Greek yogurt or plain yogurt ( full fat or low fat )
- 4 eggs
- 1 tsp vanilla
- 1 lb. peaches (about 2-3 peaches, unpeeled)
- 2 cups flour
- 2 1/2 tsp baking powder
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1 tbsp. kaak spices (1/4 ginger-1/4cinnamon-1/4nutmeg-1/4ground anise)
- 1/2 tsp turmeric
- 3 tbsp. hot water
- Handful of walnuts or any other nuts
For the cinnamon glaze:
- 2 tbsp. milk
- 1 cup powdered sugar
- 1/2 tsp cinnamon
- pinch of salt
Direction
- Preheat oven to 350 degree F. Grease the 9 inches pan and flour it well, and tap out the excess flour.
- In a medium bowl sift the flour, baking powder, baking soda, spices and salt.(set them aside)
- In a blender, add the sugar and oil and blend then for 2-3 mins.
- Gradually add the eggs and vanilla and blend for another 2 minutes until bubbly.
- Add the yogurt and blend them again. Then cut the peaches into small cubes and them to the egg mixture and mix them using spatula or spoon.
- Add the egg mixture to the flour mixture, and fold using spatula. Add the hot water and fold until well combined and smooth.
- Transfer the cake to the greased pan.
- Bake in the preheated oven for 50 minutes ( use thin skewer to test the cake if it's done, it should come clean with no streaks of batter)
- Make the glaze: Whisk together all the ingredients. if it's too thick add 1 more tbsp. of milk.
- Place the cake on a plate and let it cool for about 15 mins. Drizzle the cinnamon glaze over iy. Garnish with walnuts or any nuts you prefer.
WRAP THE CAKE WELL IT KEEPS IT VERY WELL FOR SEVERAL DAYS
