Lebanese dessert-Atayef-قطايف عصافيري
Atayef is arabic dessert we make in Ramadan. Atayef is made of dough filled of ashta. You can substitute the ashta with cheese, ground walnuts just add sugar and blossom water, groung coconut and add sugar and blossom water, or make it easy and sweet and filled with chocolate.
Today i’ll be sharing my homemade easy Atayef dough only,everyone can make it.

Surprise your family by making homemade atayef.
Ingredients
- 2 cups all purpose flour
- 1 tbsp sugar
- 1/2 tbsp yeast
- 1/2 tsp salt
- 1 tbsp cornstarch
- 2 cups warm water
- 1/4 cup warm milk
Direction
- In a medium biwl , mix the dry ingredients ( flour, sugar, yeast, salt, cornstarch),add the the warm water and mix well using whisker. Now add the milk and mix again.
- Cover the bowl using plastic wrap and let it rest for about 20-30 minutes, or until bubbly on too.
- Heat non-stick griddle over medium-high heat and pour less the 1/4 cup of batter for each moni atayef.
- Cook one side only, bubble will start to form and cook until too gets dry (about 2-3 minutes) .
- Cover them with a towel to keep them soft.
Now you have the atayef dough ready. Choose the filling.
Here i place atayef on the bottom , then cheese and then atayef . I used sweet cheese and mozzarella cheese, and i bake it for 5 minutes each side (400 degree F) or until arayef is crispy and the cheese melts , add the syrup or honey and style it with ground pistachio.
