Eggplant Dip (Mutabal)
Eggplant Dip (Mutabal) is an amazingly delicious dish and it considered an appetizer.It's popular in Lebanon, Jordan and Syria.
It's very healthy and nutritious. Roasted eggplant combined with yogurt and sesame paste (tahini) finished with garlic and lemon juice.

Eggplant Dip(Mutabal)
Eggplant Dip (Mutabal) is an easy dip and it's absolutely a tasty dish. Try it with pita bread or crackers or maybe chips like you do with Humus.
Ingredients
3 small eggplants
2 tbsp. of sesame seeds or tahini
1 tsp minced garlic
1 tbsp. of yogurt or Greek yogurt
1 lemon about 4 tbsp. of fresh lemon juice
salt
Direction
Pre-heat oven to 450F. Place a piece of foil on the sheet pan and roast in the oven for 50 minutes. Note***(you can just grease the sheet pan and roast it in the oven for 30 minutes.
Remove the black skin from the eggplant. Using the garlic grinder or fork, mash the eggplants.
Add lemon, garlic and salt and mashed them again.
Add the yogurt and stir them well.
finally add the sesame paste or tahini and mix them.
