Homemade Clotted Cream(Ashta)

Clotted Cream (Ashta) is a Lebanese cream and it's the foundation of the Lebanese dessert ( kunafah- atayef). It made from milk (which is usually my choice) ,powdered milk, half-and-half , or a combo of milk and half-and-half.

INGREDIENTS
4 cups of milk (2 cups low fat and 2 cups whole milk)
8 tbsp. of corn starch
1 tbsp. of sugar
1 tsp of orange blossom water
1 tsp of rose water
1 cup of Ricotta cheese
Instruction
Dissolve the corn starch in 4 cups of milk.- Heat the milk on medium heat, add the sugar. Stir from time to time , and when the mixture starts steaming, stir continuously on low heat, until it thickens ( I keep it on low heat for 5 minutes more because I like it too thick,but don't forget to keep stirring).
- Add the orange blossom and rose water and stir well.
- Remove from heat . Let it cool and put it in the refrigerator 2-3 hours before using it.
- Add the Ricotta cheese to it and mix well (You can blend them, but I just love the texture of the cheese in it) .
You can add bananas pistachios and honey on top of the Ashta (my favorite), simple and yummy.
