Healthy Chocolate Chips Oatmeal Cookies

Healthy, nutritious and delicious chocolate chips cookies. A perfect healthy snack or breakfast which can be ready in less than 30 mins.






Ingredients
  • 1 1/2 cup oat flour
  • 3/4 cup rolled oats
  • 1/4 cup peanut butter powder (PB fit)
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup or honey(I used sugar-free maple flavor)
  • 1/4 cup sweetener (I used Monk fruit)
  • 1 egg
  • 2 tsp vanilla extract
  • 3/4 tsp baking soda
  • pinch of salt
  • 1 tbsp. melted coconut oil
  • 1/2 to 3/4 cup semi-sweet chocolate chips


Instruction
  1. Preheat oven to 350 degrees F. and line cookie sheet with parchment paper. Set aside.
  2. Combine egg, vanilla extract, maple syrup or honey, sweetener, coconut oil and applesauce until well mixed.
  3. Add in oat flour, rolled oats, peanut butter powder (PB fit), baking soda and pinch of salt. Fold in chocolate chips. Dough should be sticky. Now place the cookie dough in the fridge for about half an hour.
  4. Using Ice Cream scoop, or 1/4 cup - scoop dough onto parchment paper. These cookies don't spread so you need to flatten them a little.
    1. Bake cookies on the top rack of the oven for 12-14 mins (don't over bake it).
