Potato Soufflé
It's an easy recipe for such a comforting dish suitable for cold fall days. I used Italian breadcrumbs, which forms a delicious crust on the bottom and the top of the Soufflé, you could use plain breadcrumbs but the Italian gives it an amazing flavor.
A crust on the bottom, followed by potato dough, filled with ground beef, covered with potato dough and styled with Italian bread crumbs Sounds Amazing right?
Sometimes it feels so good to return to our childhood. Potato Soufflé and salad next to it has been my favorite meal, and I can never get bored of it.
Potato Soufflé could be main course, also it could be side dish. It could be filled with vegetable instead of meat.(My mother In Law made it once and it's so delicious). When it come to me, cooking for my family, I prefer one-pot-meal, All in one dish. why not? It's easier especially for the kids, you make sure they eat everything(protein, veggies and carbs) .
Did you know that potato is rich in vitamin C and may have more potassium than a banana? OH YES.
This is not one-pot-meal, but it could be, you just add the mixed vegetables while you are the cooking the ground beef. I'll be making that next time for sure.
For the potato soufflé recipe: you can prepare it one day in advance, you can cook the potato and ground beef so you can have everything ready and save some time.

Potato Soufflé

Ingredients
For the potato dough:
- 6-8 medium potatoes, peeled
- 1 tsp cumin
- 1 egg
- salt
For the filling:
- 1 lb. ground beef
- 2 medium onions (about 1 cup), chopped
- 1 tsp all spices
- 2 tbsp. olive oil
- salt & pepper
For the top:
- 4 tbsp. Italian or plain breadcrumbs
- 2 tbsp. olive oil
Direction
- Preheat oven to 450 degrees F. Spray the tray using cooking oil spray, sprinkle with 2 tbsp. of bread crumbs and set them aside.
- Boil the peeled potatoes in water until well done. Drain the potato from the water and let it cool. Mash the potato and add cumin, egg, salt and pepper, mix them well.(you could use blender to mix.
- In a medium saucepan, heat the oil and sauté the onion until soften, add the ground beef to the onion and spices. Cook the meat until it is brown in color.
- Spread half of the mashed potato over the tray you've already prepared, use spoon to even it out. Then add the meat and then the rest half pf the mashed potato on top.
- Sprinkle the remaining bread crumbs on top and spoon over the 2 tbsp. olive oil.
- Bake in the preheated oven for 20 mins or until golden.
