Rice pudding is a dish made from boiled rice mixed with milk , sugar, cornstarch and blossom water.
Rice pudding is a traditional dessert, easy to make and the ingredients are simple, It's cooling and refreshing and satisfying at the same time.
I tried making Rice Pudding several times, and I FAILED. I know I always can buy the ready ones, but why don't I make my own from scratch while I have the ingredients.
Here I am sharing with you the Rice Pudding recipe from simple ingredients, and the mistakes I did and I shouldn't, and what I did now to make this recipe succeed .
Some people don't add the corn starch, which is totally fine since the rice has starch in it, but in this case you have to add more rice. Here in my recipe I'll be using the corn starch because I like it less rice and creamy.
The consistency and the sweetness is just perfect, but remember you always can add more or less the quantity of sugar if you want it less sweet and cornstarch if you want it softer.
Here what I did and I call it mistake and I wish somebody advised me and told me what to do.
I started with boiling the rice and I added the milk without making sure the rice is well done. OOPS! I thought the rice will cook properly when I'll add the milk, and now I discovered it won't cook after you add the milk. YOU HAVE TO MAKE SURE THE RICE IS WELL DONE BEFORE ADDING THE MILK TO IT! done ?

Rice Pudding Recipe
Make your perfect homemade rice pudding ,creamy and tasty dish. I sprinkled pistachios you can top it with nutmeg or cinnamon.
Note** You can double up the ingredients
Ingredients
1/3 cup medium grain rice
2 cups or water
4 cups milk (2% or whole milk)
3/4 cup sugar
2 tbsp. corn starch + 1 tbsp. water
1 tbsp. blossom water(optional)
pistachios or cinnamon(optional)
Directions
In a medium saucepan, add rice and water , bring them to boil over high heat. Simmer covered over medium heat until water has been absorbed ( always check the rice before adding the milk)
Add milk and sugar , cook uncovered over medium heat, stir frequently.
In a small bowl or cup mix the cornstarch with water before adding them to the milk mixture.(Cornstarch needs to dissolve first with cold or room temperature water before you add it to the hot mixture).
Add the corn starch and water to the mixture and stir frequently(non-stop). Cook and bring them to boil until creamy thick consistency.
Remove from the heat and add the blossom water . sprinkle with pistachios or cinnamon.
Rice pudding can be served warm or cold.
Cover it with plastic wrap if you don't like the skin.
