Yellow Lentil Soup Recipe (Mediterranean Lentil Soup)













Red lentil is very nutritious which improves your health and help you lose weight and maintain weight loss.





This soup known as "cook-itself" , you simmer the lentils, carrots, potato, squash and onion all in one pan. It's a very healthy soup full of protein and fiber.





During Ramadan, whether it's summer or winter this lentil soup should be on the table,  a perfect starter soup after long day fasting, very delicious and satisfying.













Yellow Lentil Soup Recipe(Mediterranean Lentil Soup)













Ingredients


  • 11/2 cups Red Lentil

  • 1 onion

  • 2 carrots

  • 3 medium potatoes

  • 1 squash

  • 8 cups of water

  • 1 tbsp. cumin

  • salt






Instructions


  1. Rinse the lentil well.

  2. Dice the onion, carrots , squash and potatoes.

  3. In a large pot, combine all ingredients(onion, carrots, potatoes, squash, water, cumin and salt).

  4. Bring them to a boil, then let simmer for about 20  minutes.

  5. Using hand blender or blender blend the mixture until it's puree .

  6. Let it simmer for 10 more minutes.


  7. Serve with crackers or crusty pita bread.







*Note*:You can add olive oil or butter at the end for a great taste.
