The health benefits of yogurt are so impressive. It's very nutritious, and eating it regularly has a lot of benefits. For example, it reduces the risk of heart disease and osteoporosis, as well as aid in weight management.

Yogurt can be made from all types of milk. I used lactose free for my recipe, you can use any other type, full fat - 2% Reduced fat milk, but I don't recommend to use 1% or fat free.

So, here it is the process:
Step 1: choose your milk
Step 2: Put the milk in a pan on a medium heat until it reaches 180 F if you're using thermometer. Actually I didn't. what I did is I put it on medium heat for 20 minutes

when you see the bubbles around the pan turn the heat off.
And should be look like this :
Step 3: Cool the milk.
If you're using the thermometer the milk should reach 110-115 F.
What I did??
I used this technique :I poured the milk in another container and left it for 25-30 minutes, I used my finger and I count till 10, if I didn't feel the burn then it's the perfect time to pour the pre-prepared yogurt. (The milk should be warmer than your body)
Step 4:Adding the culture.
I added 1 tbsp. of salt, and I pour the yogurt culture into the pan and whisk them well.

Pre-heat oven to 150 F. Cover the pan with a big towel .Turn off the oven ,and pop then covered pan for 8 hours. (Note:don't move the pan).
After 8 hours it should look like this. Once is done incubating, refrigerate it for 12 hours.
If you like thicker yogurt then you can strain off the remaining whey using pillow case or cheese cloth. Personally I love thick yogurt.

My favorite way to eat the yogurt is with bread-tomatoes-olive and green (mint or arugula)

How to make homemade yogurt
Ingredients:
- 1/2 gallon of milk - any type you like
- 1 cup of pre-made yogurt
- Salt
Directions:
- Heat milk in a pan over medium heat until it reaches 180 F , or when you see bubbles on the side of the pan.(It should be after 20 minutes)
- Pour heated milk in a clean big container or leave it in the pan . Let cool until the temperature 110-115 F , or leave it for around 25-30 minutes to cool down the temperature. Check my no thermometer technique above.'
- Mix salt with the pre-made yogurt and add it to the container. Lightly stir them.
- Pre-heat the oven 150 F. Cover the container or the pan with a big dark towel or blanket. Place the container in the oven for 8 hours..
- Put the container or pan into the refrigerator until the yogurt is cold and set.
- Strain off the the liquid using cheese cloth or pillow case for a thicker consistency.
